Based on the weight of the mussel, we can get about 27% of meat. For each 100 tons we get 27 tons for consumption. However, in some cases the mussel is sold fresh with shell.
The extra shell, that is seperated from the meat is pulverised and put back to the ocean where needed. In some areas in North Atlantic ocean the sea is getting sour and the bitter shell works against it. This is done in cooperation with environmental institutes.
